There is a lot of excitement at Castleknock Hotel in Dublin ahead of the planned opening of their extension that is due to open in December 2017. The new wing will see an additional 52 bedrooms added to bring the hotel capacity up to 190 bedrooms along with a new purpose-built day spa. The hotel already has a fitness and leisure centre with an onsite 18-hole golf course.

Tonight, 21st September, the hotel is launching two new restaurants along with a refurbished bar and lobby as part of ground floor refurbishment as part of the €7 million project. Being Irish owned by Farmer Business Developments (FBD Hotels & Resorts), the hotel felt it was important to reflect their identity in their food offering and as such have moved to a farm to fork concept at its signature restaurant, Earth &Vine.

The philosophy is simple. They want their dishes to be the best expression of the wonderful ingredients that we find right here on this Island forging great relationships with some of Ireland’s best artisan producers to produce delicious contemporary dishes from traditional ingredients, a truly Irish food experience. 22 Bar & Restaurant is the hotel’s new casual restaurant concept. The menu is a homage to some of the best loved comfort food dishes from across the globe.

Castleknock Hotel already has 15 conference rooms catering for MICE business with the largest room hosting up to 160 delegates cabaret style and 300 theatre style. The hotel is also synonymous with hosting high profile sports teams as the home of the Irish Senior International Men and Women’s team and the preferred hotel of the New Zealand All Blacks Rugby team.
